Ingredients:
- 4 chicken thighs
- 3 carrots roughly chopped
- 2 onions roughly chopped
- 4 cloves of garlic thinly sliced
- 4 tbsp sage roughly chopped
- 2 tbsp butter
- salt and pepper
Method:
1. Preheat your oven to 425 degrees
2. In an oven proof dish combine the carrots, onions, garlic and half the sage with 2 tbsp of oil and season with salt and pepper
3. Place the chicken over the vegetables, and season with salt, pepper, sage and the small pieces of butter
4. Roast for 30 minutes
