...Mozzarella Meat Balls

Meatballs are one of life's great comfort foods. Not only are they easy to whip up when you've had a busy day but they're also sure to please those you're cooking for too. Our recipe uses a combination of beef and pork and is spiked with grated mozzarella cheese. The addition of pork and mozzarella keeps the meatballs really moist and tender. 


Ingredients:
(Meatballs)
- 1/2 lb lean ground pork
- 1/2 lb lean ground beef
- 2 eggs
- 1/4 cup of panko bread crumbs
- 3 tbsp finely chopped parsley 
- 1 cup grated mozzarella cheese
- 3 tbsp Worcestershire sauce 
- Salt and pepper
(Pasta Sauce)
- 100g pancetta cut into cubes
- 1 onion roughly chopped
- 3 carrots rougly chopped
- 1 can of tomato paste
- 1 can crushed tomatos
- 100g grated parmesan cheese
- Salt and pepper 

Method:
1. Combine all the meatball ingredients together in a large bowl. 

2. Roll into meatballs out to your desired size and place them onto a roasting tray

3. Preheat your oven to 350 degrees and bake for 35 minutes 

4. While the meatballs are baking, make the tomato sauce by frying the pancetta until golden brown. Remove the pancetta and fry the onions and carrots until soft



5. Add the can of tomato paste and fry for another 1-2 minutes. Add crushed tomatoes and simmer for 10 minutes. Use a hand blender and puree the sauce until smooth. Season with salt and pepper


6. Serve the sauce over pasta with the meatballs, grated parmesan and reserved pancetta
